It's happened before, right? Your big pan is dirty so you use a smaller one to make the food you have in mind but you come into an issue. Your pan is stuffed to the brim with your ingredients! When this happens, you're actually sabotaging your own cooking. When your pan is overcrowded, your food still cooks, however, what happens is that moisture gets trapped underneath your food. Your food won't get the same caramelized crust which prevents it from getting crisp. To avoid overcrowding, try making smaller portions or making batches. You won't regret it!
