Green Goddess Sandwiches

This sandwich may sound light but with the hard boiled eggs, cucumber, and avocado, it's heavy in taste and size. Bring these to work or have them for dinner. You'll love these.




Ingredients

  • 1/3 c. mayonnaise

  • 1/2 tbsp. lemon juice

  • 1/2 small clove garlic, finely grated

  • Kosher salt and pepper

  • 1/4 c. basil, chopped

  • 2 tbsp. chopped chives

  • 8 slices whole-grain bread

  • 2 c. salad greens or favorite lettuce

  • 1 avocado, sliced

  • 1/2 seedless cucumber, halved crosswise and thinly sliced lengthwise

  • 1 c. sprouts

  • 4 hard-boiled eggs, sliced



 

Directions


In a small bowl, combine mayo, lemon juice, garlic, and 1/4 teaspoon each salt and pepper; fold in basil and chives.


Spread basil mayo on bread, then create sandwiches with lettuce, avocado, cucumber, sprouts and eggs.
